I love avocado, roasted veggies and of course my new way of cooking eggs in the oven.
In less than 15 minutes, you can be enjoying a healthy and nutritious breakfast.

Avocado Veggies Breakfast Egg on Top
PREPARATION & COOKING
5 min preparation
8-12 min cooking
1 lime or lemon
1 serving of roasted veggies: zucchinis, eggplants and tomatoes are the best
1 serving of bread
1 egg per toast
Preheat oven to 180-200 degrees C
Prepare and cook your eggs in the oven - see my recipe here
Cut your avocado in half and remove the pit.
Use a tablespoon to scoop out the avocado flesh and place it in a bowl with some lime or lemon juice.
Mix the avocado to create an avocado butter.
Toast your bread.
Add the avocado butter on top.
Place few slices of your roasted veggies.
Remove the eggs from the oven.
Scoop them out of the tray using a tablespoon and place it on top of the bread
Enjoy with some salt or pepper.
